Executive chef Ryan Squires (formerly of Brisbane's first degustation-only restaurant, The Buffalo Club) has spent two years developing Esquire with co-owner Cameron Murchison. Tucked away on Eagle Street, Esquire occupies a prime waterfront location maximised by floor-to-ceiling windows affording a glorious view of the Story Bridge. The dining room is chic with bare wooden tables, pale leather banquettes and an immaculate open kitchen. The restaurant offers a multi-course approach to food with two degustation-only menus that showcase European and Japanese culinary techniques.
